Fish pan with salad or spaghetti
Profile#
This delicious meal is prepared within minutes and can be enjoyed with spaghetti or with a salad.
Ingredients#
- Approx. 1Kg fish fillet cut into small pieces (what is currently on offer)
- Olives
- Garlic
- 2 chilies
- 1 glass of wine (recipe for 2x spaghetti plus 2x salad each)
- 1/2 lemon
- salt, pepper
- Spices (see text)
- Salad with favorite dressing
Let’s go#
Marinate fish and leek (in fine strips) in olive oil
Chop garlic and chili finely. Cut or chop olives into rings
Provide half lemon and a glass of white wine
Spices are fish spice for frying (1tsp) and/or Neptune’s dream (1/2tsp, not too much). Your preferred BBQ spice does it too. Instead of Neptune’s dream you can also use a pinch of Greek ouzo or French pastis. Add this to the pan at high heat and let it reduce before adding the wine.
Now the timing is crucial. The fish needs about 12-14 minutes. So typically first bring the water for the spaghetti to boiling temperature, then fry the fish in a pan with some olive oil for 2-3 minutes BEFORE you start cooking the pasta. Do not overheat the pan. Immediately after the fish is in the pan, put the spices over it.
After 4 minutes, carefully turn the fish and add olives, garlic and chili to the top. Add a pinch of salt and pepper. Do not forget the pasta.
Fry for additional 3-4 minutes (rather 3 than 4), then add wine and lemon juice. Loosen it up a bit so that olives & co fall into the brew.
Reduce temperature. Do not let it boil too long. If the pasta is finished too early, put a lid on the fish for the last minutes.
Pour over the spaghetti or over the salad.
