Gomaae Spinach
Profile#
Horenso Gomaae is the Japanese name for this dish. Horenso means spinach, Goma is the word for sesame seed and Ae means dressing. So the name says it all and this salad is truly a Japanese classic that I love. In general, spinach shows up in some of my recipes, like the Chinese Spinach version. This one, however, is eaten cold like a salad and some of you probably know it from your favorite Japanese restaurant.
Ingredients#
- 250g fresh spinach
- 3 tbsp roasted white sesame seeds
- 1,5 tbsp soy sauce
- 0,5 tbsp sake
- 0,5 tbsp mirin
- 1 tbsp brown sugar
Let’s go#
On the photo you can already see all the ingredients for the recipe you need only about 15 minutes to prepare it.
Put the sesame seeds in a mortar and grind coarsely. It does not need to be too fine, as seen in the picture is already enough.
Now add the liquid ingredients and mix everything well.
You’ll need a large pot of boiling water to blanch the spinach for about 30 to 40 seconds. For the second photo I had to hurry up quite a bit.
Do not let the spinach cook too long. Pour off the water and pour cold water immediately over the spinach to quickly finish the cooking process.
Now squeeze the spinach and form into small rolls.
Cut the rolls into pieces about 2cm wide and put them in a bowl
Pour over the dressing and mix well, Done!
