Stuffed pork fillet with gnocchi and cauliflower

This is a fairly elaborate recipe from a book, but you’re rewarded for the effort, it’s fantastic. Of course you can also save a filling, but the first time you could try both of them. Like other dishes before it is made at low temperature. At this point, the categories should be pointed out. So you can quickly find all low temperature recipes.
Ingredients#
For the first filling#
- 1 pepper
- Thyme
- A handful walnuts
For the second filling#
- Dried tomatoes in oil
- 1-2 branches of rosemary
- A handful pine nuts
For frying and for the sauce#
- 1 teaspoon sugar
- 30g Butter
- 500ml passed tomatoes
- 100ml vegetable broth

The pork fillet.
Finely chop the peppers, flakes of thyme, finely chop the nuts.
Mix everything and place aside.
Cut the tomatoes, finely chop the pine nuts, finely chop the rosemary.
Mix everything and place aside.
Remove all skins and fat from the fillet. Cut the fillet of pork in half and stick it with a sharp and not too wide knife along and fill the half’s with the mixtures. One mixture per half. Just plug in with your fingers, it fits almost everything.
Salt, pepper and fry all around. Do not forget the ends.
Give a bit of olive oil into a casserole. Add some rosemary and place on the stewed fillet.
Put into the oven at 80° for 1:45 hours. WARNING: The temperature is important, not too hot, but not less. Check your oven in advance to find the right setting for 80°.
Do not clean the pan and set it aside. 20 minutes before it is finished heat up the pan again.
Caramelize some sugar and pour in 100ml of vegetable broth. Clean the ground of the pan while cooking and add the passed tomatoes.
Cook for 15 minutes and then add 30g of butter.
Cut the meat into larger pieces and place them in the sauce. Thanks to the low temperature you don’t have to wait after getting the meat out of the oven.
Serve with gnocchi and boiled cabbage. Of course you can take something else, but the Gnocchi fit well.
